Chef Laurent Jury has remained true to the vision he has followed since his beginnings: a cuisine firmly rooted in carefully selected farm produce supplied by a hand-picked selection of producers. This down-to-earth approach is combined with a fascination with Asia. A black belt in judo and Tai Jitsu, Laurent Jury learnt a different level of discipline from Japanese chefs. This is what is symbolized by the cherry blossom, the emblem of his restaurant.
